Ground Beefless Noodle Soup

Serves 2


Broth

1250ml vegetable stock

½ red onion

3 chillies

2 cloves garlic

1 inch piece ginger

1 tsp sesame oil

1tbsp liquid aminos or soya sauce

3tbsp tamari

1 tbsp miso

100g soya mince

1 star anise


Filling

1 pak choi

50g baby corn

100g mushrooms

1 carrot

100g broccoli

½ red pepper


Extras

50g rice noodles

15g fresh coriander

1 tsp sesame seeds


1. Cook broth for 5 minutes in a pan.

2. Add filling and cook for 5 more minutes. Meanwhile, cook the noodles separately according to the packet instructions.

3. Serve the soup over the noodles and garnish with coriander and sesame seeds. And remember, too much fresh coriander is an imagined construct. Sprinkle that magic on everything.


Do not eat the star anise!
